Will Keeping Cooked Chicken Warm in a Crock Pot (or Otherwise), Keep It Fresh for a Several Hour Party?
We’re having a large family and friend get together coming up (50+ guests). I’ve decided to make my at home buffalo chicken. Its basically cut up chicken breast, cooked then marinated in hot sauce. I want to cook the chicken in advance, so we obviously have more time for our guests while they are here. My question is this: Will keeping the chicken in a crock pot (or anything that will keep it warm) keep it fresh? If so, how long?

Chicken won’t go bad in a matter of hours. If possible, I would cook it JUST before guests arrive, then take it out of the oven. Maybe they will have worked up a bit of a hunger. If you set it out in a crock pot, it will stay good. Keep it at a low setting, and make sure there is enough juice/sauce.
Another good and easy option is buffalo chicken dip. 2 pkgs cream cheese, 1/4C Franks Red Hot, 1/4C bleu cheese dressing. 8oz shredded cheese, 1 1/2 cooked & shredded chicken breast. Lightly sear breast in butter, salt & paprika. mix all together. sprinkle a quarter of the shredded cheese on top. Bake at 350 for 25 min.

as long as its kept above 140 deg. any lower you risk food poisoning

If you want to keep it warm you need to keep it above 140 F or it will be in danger of developing food-born contaminates. It would be best to cook it in batches as needed but a few hours shouldn’t hurt. If you leave it in a crock pot with a lid on it will be fine for a good 4 – 6 hours but you shouldn’t save it after that.

The cooked chicken in crockpot will keep cooking the chicken so that it will probably overcook, unless your crock pot has a ‘warm’ setting.
I would have it in a dish in the fridge ready to bang in a warm oven 30-40 minutes before the service
